Vinaigrette Ingredients: 

  • 1/6 cup extra-virgin olive oil (or approximately 2 tablespoons + 2 teaspoons)
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard or 1/2 teaspoon dry mustard
  • 2 tablespoons grated Pecorino Romano or Parmesan, plus more for serving
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Salad Ingredients:

  • 1/2 head iceberg lettuce, rinsed and finely chopped
  • 1/8 pound Italian salami, julienned
  • 1/2 cup shredded mozzarella cheese
  • 1/2 (15 1⁄2-ounce) can of garbanzo beans, rinsed and well-drained

Recipe Directions:

To make vinaigrette: In a large serving bowl, combine oil, vinegar, mustard, cheese, and salt and pepper to taste; whisk until well blended.
