Vinaigrette Ingredients:
- 1/6 cup extra-virgin olive oil (or approximately 2 tablespoons + 2 teaspoons)
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard or 1/2 teaspoon dry mustard
- 2 tablespoons grated Pecorino Romano or Parmesan, plus more for serving
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Salad Ingredients:
- 1/2 head iceberg lettuce, rinsed and finely chopped
- 1/8 pound Italian salami, julienned
- 1/2 cup shredded mozzarella cheese
- 1/2 (15 1⁄2-ounce) can of garbanzo beans, rinsed and well-drained
Recipe Directions:
To make vinaigrette: In a large serving bowl, combine oil, vinegar, mustard, cheese, and salt and pepper to taste; whisk until well blended.
